Stir Fried Green Beans with Pork

Ingredients

  • 300g / 10oz pork tenderloin or loin (or chicken)
  • 2 tsp soy sauce
  • 1 1/4 tsp cornstarch
  • 1 lb green beans
  • 2 tbsp peanut oil (or vegetable oil)
  • 2 garlic cloves, minced
  • 1 tbsp ginger, grated
  • 2 tbsp Chinese cooking wine (or Mirin or cooking Sake)
  • 2 tbsp oyster sauce
  • 1 tsp sesame oil
  • 1 tbsp light soy sauce
  • 1/2 tsp sugar
  • 1/4 cup (4 tbsp) water
  • 1/4 tsp white pepper
  • 3/4 tsp cornstarch
  • Sliced green onions (optional)

Instructions

  1. Cut pork into thin slices, then into bite size strips. Place in a bowl with 2 tsp soy sauce and 1 1/4 tsp cornstarch. Mix.
  2. Top and tail beans, then cut in half.
  3. Combine 1/4 cup water with Chinese cooking wine, oyster sauce, sesame oil, light soy sauce, sugar, 3/4 tsp cornstarch and white pepper.
  4. Heat oil in a large skillet over high heat. Add pork and cook until it changes colour but not cooked through. Remove.
  5. Add a touch more oil if needed, then add garlic and ginger. Stir fry for 20 seconds.
  6. Add beans and stir fry for 1 minute.
  7. Return pork to skillet followed by Sauce. Stir fry for 1 1/2 minutes, or until Sauce is thickened.
  8. Garnish with green onions if desired. Serve hot, over rice!
