Pesto-Crusted Cod with Garlic Roast Potatoes

Ingredients

  • 4 cod fillets
  • 4 tbsp pesto
  • 500g new potatoes, halved
  • 2 garlic bulbs, halved horizontally
  • 2 tbsp olive oil
  • 1 lemon, cut into wedges
  • Salt and pepper

Instructions

  1. Preheat the oven to 200°C/fan180°C/gas 6. Put the cod fillets on a baking tray lined with baking paper.
  2. Spread 1 tbsp of pesto over each fillet.
  3. Put the potatoes and garlic in a roasting tin, drizzle with olive oil and season. Roast for 30 minutes, turning the potatoes halfway through.
  4. Put the cod in the oven and roast for 10-12 minutes until the fish is cooked through and the topping is golden.
  5. Serve the cod with the roast potatoes, garlic, lemon wedges and a green salad.
