One-Pan Salmon Rotini

Ingredients
- 8 oz rotini pasta
- 1 lb salmon fillet, cut into 1-inch pieces
- 1 cup cherry tomatoes, halved
- 1/2 cup black olives, sliced
- 1/4 cup capers
- 2 cloves garlic, minced
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 1 tsp dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a large baking dish, combine the rotini pasta, salmon pieces, cherry tomatoes, black olives, capers, and minced garlic.
- Drizzle olive oil and lemon juice over the mixture. Sprinkle with dried oregano, salt, and pepper.
- Toss everything together until well combined.
- Cover the baking dish with foil and bake in the preheated oven for 20-25 minutes, or until the salmon is cooked through and the pasta is tender.
- Garnish with fresh parsley before serving.
