One-Pan Salmon Rotini

Ingredients

  • 8 oz rotini pasta
  • 1 lb salmon fillet, cut into 1-inch pieces
  • 1 cup cherry tomatoes, halved
  • 1/2 cup black olives, sliced
  • 1/4 cup capers
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large baking dish, combine the rotini pasta, salmon pieces, cherry tomatoes, black olives, capers, and minced garlic.
  3. Drizzle olive oil and lemon juice over the mixture. Sprinkle with dried oregano, salt, and pepper.
  4. Toss everything together until well combined.
  5. Cover the baking dish with foil and bake in the preheated oven for 20-25 minutes, or until the salmon is cooked through and the pasta is tender.
  6. Garnish with fresh parsley before serving.
