Bang Bang Chicken with Rice

Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • Salt and pepper, to taste
  • 1 cup cornstarch
  • 2 large eggs, beaten
  • 1/4 cup vegetable oil
  • 1/2 cup mayonnaise
  • 1/4 cup Thai sweet chili sauce
  • 1 tbsp honey
  • 2 cups cooked rice
  • Sesame seeds, for garnish
  • Green onions, chopped, for garnish

Instructions

  1. Season the chicken pieces with salt and pepper.
  2. Dredge the chicken in cornstarch, then dip in beaten eggs.
  3. Heat vegetable oil in a large skillet over medium-high heat.
  4. Fry the chicken until golden brown and cooked through, about 5-6 minutes per side.
  5. In a small bowl, mix together mayonnaise, Thai sweet chili sauce, and honey.
  6. Toss the cooked chicken in the sauce until well coated.
  7. Serve the bang bang chicken over cooked rice.
  8. Garnish with sesame seeds and chopped green onions.
  9. Enjoy!
