Vegetable Soup with Root Vegetables and Herbs

Ingredients
- 1 large potato, peeled and sliced
- 1 large turnip, peeled and sliced
- 1 carrot, peeled and sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Peel and slice the potato and turnip into thin slices.
- Peel and slice the carrot.
- Chop the onion and mince the garlic.
- Heat olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic to the pot and sauté until the onion is translucent.
- Add the sliced potato, turnip, and carrot to the pot.
- Pour in the vegetable broth and bring to a boil.
- Reduce heat and simmer for about 20 minutes or until the vegetables are tender.
- Season with salt and pepper to taste.
- Ladle the soup into bowls and garnish with fresh parsley.
- Serve hot.
