Crispy Chicken Sliders with Spicy Sauce

Ingredients

  • 8 Hawaiian sweet rolls
  • 2 boneless chicken breasts
  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup panko breadcrumbs
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • Vegetable oil for frying
  • 1/2 cup spicy mayonnaise
  • 8 dill pickle slices

Instructions

  1. Slice the chicken breasts in half horizontally to create four thin pieces.
  2. Place each piece between plastic wrap and pound to even thickness.
  3. In a shallow bowl, combine flour, salt, pepper, and paprika.
  4. In another bowl, beat the eggs.
  5. Place panko breadcrumbs in a third bowl.
  6. Dredge each chicken piece in flour, dip in egg, and coat with breadcrumbs.
  7. Heat oil in a frying pan over medium heat.
  8. Fry each chicken piece until golden brown and cooked through, about 3-4 minutes per side.
  9. Transfer chicken to a paper towel-lined plate to drain excess oil.
  10. Slice Hawaiian rolls in half horizontally.
  11. Spread spicy mayonnaise on both halves of each roll.
  12. Place a fried chicken piece on the bottom half of each roll.
  13. Top each with a dill pickle slice.
  14. Cover with the top half of the roll.
  15. Serve immediately.
