Vibrant Veggie and Egg Bowl

Ingredients

  • 2 large eggs
  • 1 avocado, halved and pitted
  • 1 cup mixed greens (e.g., kale, spinach)
  • 1 carrot, grated
  • 1 cup cucumber noodles or ribbons
  • 4 radish slices
  • 2 cherry tomatoes, halved
  • 1 tbsp sunflower seeds
  • 1 tbsp sesame seeds
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 1 tbsp apple cider vinegar

Instructions

  1. Place eggs in a pot and cover with water.
  2. Bring to a boil, then remove from heat and cover for 7 minutes.
  3. Transfer eggs to ice water to cool, then peel and halve them.
  4. Halve and pit the avocado.
  5. Rinse and dry mixed greens, then roughly chop.
  6. Grate the carrot and set aside.
  7. Prepare cucumber noodles or ribbons.
  8. Slice radish into thin slices.
  9. Plate the mixed greens on one half of a bowl.
  10. Arrange cucumber noodles on the other half.
  11. Add grated carrot on top of the avocado half.
  12. Place cherry tomato halves around the bowl.
  13. Add peeled and halved eggs to the bowl.
  14. Sprinkle with sunflower seeds and sesame seeds.
  15. Drizzle olive oil and apple cider vinegar over the bowl.
  16. Season with salt and pepper to taste.
  17. Serve immediately.
