Charred Cabbage with Scallions

Ingredients

  • 1 medium green cabbage
  • 3 tablespoons olive oil
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons soy sauce
  • 2 scallions, thinly sliced

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Cut the cabbage into wedges, keeping the core intact to hold the leaves together.
  3. Brush the cabbage wedges with olive oil, and season with salt and pepper on both sides.
  4. Arrange the cabbage wedges on a baking sheet, cut side down.
  5. Roast in the oven for 25-30 minutes, until the edges are charred and the cabbage is tender.
  6. In a small bowl, mix the balsamic vinegar and soy sauce.
  7. Once the cabbage is roasted, drizzle the balsamic and soy sauce mixture over the wedges.
  8. Sprinkle the sliced scallions on top for garnish.
  9. Serve hot as a side dish.
