Smoked Meatloaf

Ingredients

  • 1 cup panko breadcrumbs
  • 1/2 cup whole milk
  • 1 small onion, finely chopped
  • 1 small red bell pepper, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh chives
  • 1/4 cup chopped fresh dill
  • 1/4 cup ketchup
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 tablespoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 1/2 pounds ground beef
  • 1/2 pound ground pork
  • 2 large eggs
  • 1/2 cup barbecue sauce

Instructions

  1. Preheat a smoker to 250 degrees F.
  2. Mix the breadcrumbs and milk in a large bowl and let sit until the milk is absorbed, about 5 minutes.
  3. Add the onion, bell pepper, garlic, parsley, chives, dill, ketchup, Worcestershire sauce, mustard, salt, and pepper to the bowl with the breadcrumbs and mix to combine.
  4. Add the ground beef, ground pork, and eggs to the bowl and mix until well combined.
  5. Form the meat mixture into a loaf shape and place on a wire rack set over a baking sheet.
  6. Transfer the meatloaf to the smoker and cook until the internal temperature reaches 160 degrees F, about 2 hours.
  7. Brush the barbecue sauce over the meatloaf and continue to cook for another 15 minutes.
  8. Let the meatloaf rest for 10 minutes before slicing and serving.
