Peaches in Ginger Syrup

Ingredients

  • 3/4 cup dry white wine
  • 3/4 cup water
  • 3/4 cup sugar
  • 3/4 (2-inch) piece fresh ginger, coarsely grated
  • 3/4 pound peaches (8)
  • 2 tablespoons fresh lemon juice

Instructions

  1. Simmer wine, water, sugar, and ginger, stirring occasionally, until reduced to about 3/4 cup, about 15 minutes.
  2. While syrup is simmering, slice peaches and toss with lemon juice.
  3. Pour hot syrup through a fine sieve onto peaches, then stir.
  4. Let stand 20 minutes.
